• Coq au Vin: Braised free range chicken in a burgundy red wine sauce with truffle potato puree
• British Columbia King Salmon: Sun dried tomato risotto and fennel in a saffron tomato broth
• Hard Red Winter Wheat Linguine: Roma tomatoes, arugula, asparagus and fiscalini aged cheddar
